Easy Pav Bhaji – Indian Street Food

Pav Bhaji is a popular street food originating from India. ‘Bhaji’ refers to tangy, flavourful, thick vegetable curry, cooked in butter and spices. It is served with soft bread rolls called ‘Pav’. The vegetables in the dish may include potatoes, green peas, tomatoes, onions, carrots, cauliflower, bell peppers. This dish is so tasty and I call it ‘healthy’ street food.

This used to be my favorite dish as a child because I was never able to tell what vegetables are in the dish. This was my mom’s favorite dish to serve us as well because she would put every possible vegetable in it and we would happily eat it. My mom used to add bottle gourd (lauki) in the recipe as well. Traditionally, bottle gourd is not added to pav bhaji but it is a great way to add more nutrition to the dish and it provides the bhaji a smooth texture.

Bhaji is garnished with butter, cilantro, onions and lime wedges and is served with toasted Pav. It is such a delicious combination.

Ingredients
  

Vegetable Prep

  • 2-3 cloves Garlic
  • 1 medium Bottle gourd
  • 3 medium Potatoes
  • 4 Carrots
  • 1 cup Green peas
  • 1 tsp Salt
  • 1 tbsp Olive oil
  • 1/4 cup Water

Tadka

  • 2 tbsp Olive oil
  • 1 tbsp Butter
  • 3 cloves Garlic chopped
  • 1 inch Ginger chopped
  • 2 medium Onions chopped
  • 1 large Green bell pepper chopped
  • 2 medium Tomatoes chopped
  • 1/2 cup Tomato paste
  • 1 tsp Cumin seeds
  • 1/2 tsp Coriander seeds
  • 1/2 tsp Mustard seeds
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/4 tsp Garlic powder
  • 1 tsp Garam masala
  • 1/2 tsp Turmeric powder
  • 3 tsp Pav Bhaji Masala
  • 1/2 Lime juiced

Garnish

  • Lime wedges
  • Onions
  • Cilantro
  • Butter

Instructions
 

Vegetable prep

  • Roughly chop potatoes, carrots and bottle gourd and add to pressure cooker.
  • Add green peas, garlic cloves, salt, olive oil and water to pressure cooker as well.
  • Close the lid of the pressure cooker and cook for about 15 minutes on medium heat. (approx. 4 whistles)
  • Do not open the pressure cooker, keep aside to cool.

Tadka

  • In a sauce pan, heat olive oil. Add cumin seeds, mustard seeds and coriander seeds. When they start crackling, add chopped ginger and garlic.
  • Sauté for 30 seconds. Add onions and cook them on medium heat for 5 minutes.
  • Add chopped bell pepper and cook for 3 to 4 minutes.
  • Now, add chopped tomatoes and keep cooking for another 5 minutes, stirring occasionally.
  • Add tomato paste, salt, black pepper, garlic powder, garlic powder, garam masala, turmeric powder, pav bhaji masala and lime juice.
  • Mix all the spices and cook for 4 more minutes.
  • Now, open the pressure cooker and use a potato masher or a ladle to mash all the vegetables.
  • Add the mashed vegetables to the tadka and mix well. Cook on low flame for 5 minutes to let the vegetables absorb the flavours from the spices. Turn off the heat and garnish with cilantro.

Toasting Pav

  • Slit the Pav buns, horizontally from the middle, keeping one end intact.
  • Place butter on the pan. Open the buns and place them on the pan. Toast for a minute or two. Serve with hot Bhaji, topped with lime juice, cilantro and butter.
