Garden Fresh Sweet Corn Salad

Summer is the best time of the year to enjoy fresh produce from the garden and make refreshing and vibrant salads. This Garden Fresh Sweet Corn Salad is sweet and juicy and is loaded with colourful vegetables.

The crispy celery, chunky cucumber, crunchy bell peppers, ripe tomatoes, fresh lime juice and fragrant cilantro elevates the flavour of sweet corn and makes it a perfect summer salad.

The salad takes only 10 minutes to whip up, is a great addition to picnics, barbecues and get-togethers and is also a delicious way to eat more vegetables.

This salad stays fresh in the fridge for up to 4 to 5 days. Simply store it in a sealed container and do not add any seasoning while storing. This will prevent the veggies from going soggy. When ready to eat, just pull it out of the fridge, add salt, black pepper and fresh lime juice and enjoy!

Ingredients
  

  • 1/2 Red onion finely diced
  • 1 cup Bell pepper, all colours diced
  • 1/2 cup Celery diced
  • 1 cup Cucumber diced
  • 1 Tomato diced
  • 1/2 cup Cilantro chopped
  • 2 cups Sweet corn kernels
  • 1/2 tsp Olive oil Extra virgin
  • 1/2 tsp Cumin seeds optional
  • 1 Lime juiced
  • 1 tsp Black pepper
  • 1 tsp Salt

Instructions
 

  • Add diced tomatoes, onions, celery, cucumber, bell peppers into a bowl.
  • Roast cumin seeds on a hot pan for a minute or until fragrant. Add them to the diced vegetables.
  • Add sweet corn kernels into a bowl.
  • Add salt, black pepper, lime juice, olive oil and chopped cilantro. Mix well.
  • Enjoy as a side dish to your favourite meal!

Notes

You can store this salad in the fridge in a sealed container for 4 to 5 days.
