In a sauce pan, heat olive oil. Add cumin seeds, mustard seeds and coriander seeds. When they start crackling, add chopped ginger and garlic.
Sauté for 30 seconds. Add onions and cook them on medium heat for 5 minutes.
Add chopped bell pepper and cook for 3 to 4 minutes.
Now, add chopped tomatoes and keep cooking for another 5 minutes, stirring occasionally.
Add tomato paste, salt, black pepper, garlic powder, garlic powder, garam masala, turmeric powder, pav bhaji masala and lime juice.
Mix all the spices and cook for 4 more minutes.
Now, open the pressure cooker and use a potato masher or a ladle to mash all the vegetables.
Add the mashed vegetables to the tadka and mix well. Cook on low flame for 5 minutes to let the vegetables absorb the flavours from the spices. Turn off the heat and garnish with cilantro.
