Avocado Egg Salad – ‘Hidden Eggs’
Is it getting boring to eat eggs in your breakfast? Well, I have a delicious and easy to make Avocado Egg Salad recipe that you will love without actually tasting the eggs in the recipe!
This recipe is a perfect combination of traditional ‘Egg Salad’ and ‘Guacamole’. Conventionally, egg salad contains mayonnaise as one of the key ingredients but I replaced it with some healthy fats, i.e. AVOCADOS!
Avocados are full of antioxidants and are packed with a wide variety of nutrients, vitamins and minerals; like vitamin C, vitamin E, potassium, vitamin K etc. Avocados are also a source of healthy fats and fiber. Eggs on the other hand are a great source of protein. So, this is a super healthy combination of healthy fats and protein.
All you need is ripe avocados, boiled eggs, red onions, tomatoes, red bell pepper, fresh cilantro and lime juice. You can enjoy this salad as a super-satisfying breakfast, lunch or snack. I like to serve it with toasted Rye Bread or Brown Rice Cakes and believe me both these combinations are super yummy. You can also serve it with Everything or Sesame Seed Bagels, Sourdough Bread, Crackers or as a dip with Cucumber and Celery.
Hidden eggs:
If you mash the eggs really well with the avocados, no one can tell that there are eggs in the recipe.
So, if your kids don’t like eating eggs, it’s a great way to sneak eggs into their food. You can even serve it to them as guacamole with tortilla chips and they won’t even notice the eggs in the dish.
Avocado Egg Salad-‘Hidden Eggs’
Ingredients
- 2 ripe avocados
- 1/4 small red onion diced
- 1/2 roma tomato diced
- 1/4 red bell pepper diced
- 2 tbsp cilantro chopped
- 1 lime juiced
- 1/2 tsp salt
- 1/2 tsp black pepper ground
- 1/4 tsp sesame seeds
- 2 large eggs hard boiled
Instructions
- Slice the avocados into halves, remove the pit and scoop the inner part into a bowl. Discard the skin.
- Using a fork, mash the avocados to get a smooth consistency.
- Roughly chop the boiled eggs and add to the avocado. Using a fork, mash the eggs into the avocado.
- Add finely diced red onions, red bell pepper, tomatoes and fresh cilantro into the bowl.
- Add freshly squeezed lime juice, salt and black pepper.
- Using a spoon, mix all the ingredients well.
- Garnish with sesame seeds and serve!
Notes
- Gently place your eggs in a medium pan and fill it up with tap water; at least an inch above the eggs.
- Add 1/2 tbsp salt in the water. This will help to prevent the cracking of eggs.
- Put the pan on high flame and start your timer.
- Bring the water a boil. Lower the heat to medium low.
- I cook my eggs for 16 minutes to get them perfectly hard boiled.
- Add the boiled eggs to a cold ice bath. Let them cool for a few minutes and then peel.
