Ultimate Chickpea Salad

The Ultimate Chickpea Salad combines all of my favourite veggies and flavours into one perfect meal. This simple, vibrant, fresh and protein-packed salad is great to enjoy during the summer season.

The people who know me have definitely tasted this salad because I have made it that many times! I have bought this salad to every potluck at work and it has always been a hit among my colleagues and friends. So, what is so special about this salad? Let’s discover

  1. The salad consists of a ton of fresh veggies like cucumbers, tomatoes, onions, bell peppers, cilantro and baby spinach.
  2. The chickpeas are separately flavoured with roasted cumin seeds, lime juice, salt, black pepper and coriander powder and then mixed with the veggies. This gives the salad a boost of flavour.
  3. The salad consists of a superfood: PUMPKIN SEEDS; a great source of valuable nutrients.
  4. The addition of dried cranberries in the salad not only provides it a hint of sweetness but also makes it rich in antioxidants.
  5. Simple, yet flavourful salad seasoning/dressing, brings all these ingredients together and makes it an Ultimate Chickpea Salad!

I usually make a big batch of this salad to get me through my busy weekdays. It can be stored in the fridge for up to 4 to 5 days in a sealed container. Worried about the salad getting soggy and watery? Don’t worry, this salad is great for meal preps.

Follow my tips below to make it last longer in the fridge:

  1. The chickpeas should be completely cooled before you add them to the veggies
  2. Add the salad seasoning/dressing only when ready to eat. Add it to the portion you are going to eat and put rest of the salad back in the fridge. This will prevent the salad from getting soggy in the fridge.

Ingredients
  

Chickpeas Prep

  • 2 cups Chickpeas boiled or canned (rinsed and drained)
  • ½ tsp Cumin seeds
  • tsp Salt
  • tsp Black pepper
  • tsp Garam masala/Coriander powder
  • ½ Lime juiced
  • 1 tbsp Olive oil

Salad Prep

  • 1 cup Cucumber diced
  • 1 Tomato diced
  • cup Cilantro chopped
  • ½ cup Baby spinach finely chopped
  • ¼ cup Green olives sliced
  • ½ cup Bell pepper diced, any colour
  • ½ Red onions diced
  • ¼ cup Pumpkin seeds
  • ¼ cup Dried cranberries

Salad Seasoning/Dressing

  • 1/2 tsp Salt
  • 1/2 tsp Black pepper
  • 1 Lime juiced
  • 1/3 tsp Garam masala/Coriander powder

Instructions
 

Chickpeas Prep

  • Heat olive oil in the pan
  • Add cumin seeds and let them crackle
  • Add rinsed and drained chickpeas in the pan
  • Add salt, black pepper, garam masala and lime juice
  • Cook for 6-7 min and let the chickpeas absorb all the flavour from the spices
  • Turn off the stove and set it aside to cool down

Salad Prep

  • Chop cucumber, bell pepper, red onion, tomato, baby spinach and cilantro and add them to a bowl
  • Add cooked chickpeas, pumpkin seeds, dried cranberries and sliced green olives
  • Season with salt, black pepper, garam masala/coriander powder and lime juice when ready to eat

Notes

  1. The salad can be stored in the fridge for up to 4 to 5 days in a sealed container.
  2. Add the seasoning/dressing only when ready to eat. This will prevent the salad from getting soggy and last longer in the fridge.
