Macaroni Salad

I am presenting my favourite go-to salad recipe. It is very easy to make and can be meal prepped in advance for you to enjoy during a busy school or work week. It serves as a delicious appetizer or side-dish for family get-togethers, parties, potlucks and barbecues and is also a great option to carry along for a picnic at the beach.

The recipe consists of a few simple and fresh ingredients like cucumbers, tomatoes, bell peppers, cilantro and olives, making it perfect to relish during the summer season. The mayonnaise in the salad brings all the ingredients together by giving it the richness and creaminess but still maintaining the crispiness of the veggies. This Macaroni salad is also a great way to feed your kids more veggies.

The salad tastes delicious when served cold. You know what that means? You can totally prepare it on your day-off, store it in a sealed container, throw it in the fridge and you are set for next 3 to 4 days to enjoy it as a side dish, snack, lunch or dinner. Imagine coming home after a long day at work, and having this salad ready-to-eat in your fridge!

Ingredients
  

Ingredients for boiling pasta

  • 3 cups Macaroni pasta
  • 1/2 tsp Olive oil
  • 1/2 tsp Salt

Other ingredients

  • 1 cup Cucumber diced
  • 1 Tomato diced
  • 1 small Red onion diced
  • 1 cup Bell pepper Any colour (yellow, red or orange), diced
  • 1/4 cup Cilantro chopped
  • 1/4 cup Green olives sliced
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper
  • 3/4 cup Light mayonnaise

Instructions
 

  • Boil water in a large pot. Add salt, olive oil and pasta. Follow the cooking instructions on the package. Drain the pasta and run it under cold water to stop the cooking process. Keep aside.
  • Dice cucumber, tomato, red onion, colourful bell pepper and green olives and add to a bowl.
  • Add boiled pasta, salt, black pepper and mayonnaise to the bowl. Mix well.
  • Chill it in the fridge for 20 to 30 minutes. Enjoy!

Notes

You can store the Macaroni Salad in the fridge for up to 3 to 4 days.
