Here is my favourite go-to salad recipe. It is very easy to make and can be meal prepped in advance for you to enjoy during a busy school or work week.
1cupBell pepperAny colour (yellow, red or orange), diced
1/4cupCilantrochopped
1/4cupGreen olivessliced
1/2tspSalt
1/2tspBlack pepper
3/4cupLight mayonnaise
Instructions
Boil water in a large pot. Add salt, olive oil and pasta. Follow the cooking instructions on the package. Drain the pasta and run it under cold water to stop the cooking process. Keep aside.
Dice cucumber, tomato, red onion, colourful bell pepper and green olives and add to a bowl.
Add boiled pasta, salt, black pepper and mayonnaise to the bowl. Mix well.
Chill it in the fridge for 20 to 30 minutes. Enjoy!
Notes
You can store the Macaroni Salad in the fridge for up to 3 to 4 days.
