Easy Spaghetti with Homemade Vegetable Sauce

Looking for an easy weeknight friendly recipe? Well, I got you covered. This spaghetti recipe with delicious vegetable sauce takes less than an hour to make and turns into a perfect, homemade spaghetti dinner.

The sauce is made from scratch and is loaded with a ton of vegetables like mushrooms, onions, carrots, bell peppers and tomatoes. I have used a mix of Indian and Italian spices to flavour the sauce. The dish is packed with flavours and is loved by the whole family.

Got some picky eaters in your house? Don’t worry, this recipe is sure to please them too. So, if your kids love spaghetti but do not like to eat vegetables, this is a great recipe to sneak more vegetable into their diet. I have kept the veggies chunky in the recipe, but can chop them really fine and they won’t be able to tell that they are in the sauce.

Ingredients
  

  • 1 large Red onion diced
  • 1 large Bell pepper (any colour) diced
  • 5 cloves Garlic chopped
  • 2 Green onions chopped
  • 1 cup Carrots diced
  • 1 cup Mushrooms chopped
  • 1 can Crushed tomatoes
  • 2 tbsp Olive oil
  • 1/2 tsp Cumin seeds
  • 1 tsp Salt
  • 1/4 tsp Garlic powder
  • 1/4 tsp Black pepper
  • 1/4 tsp Red chilli powder
  • 1/2 tsp Turmeric powder
  • 1 tsp Oregano
  • 1/2 Lime juiced
  • 2 tbsp Tomato ketchup
  • 375 g Spaghetti noodles
  • Shredded cheese for garnish
  • Green onions for garnish

Instructions
 

  • Follow the instructions on the package and cook the spaghetti noodles in boiling water. Always add a tbsp of olive oil in the boiling water to avoid sticking of the noodles.

Sauce Prep

  • Heat olive oil in a pan. Add cumin seeds and chopped garlic. Sauté for a minute.
  • Add chopped red and green onions to the pan. Cook for 3 to 4 minutes. Add chopped bell peppers, carrots and mushrooms. Cook all these veggies for 5 to 6 minutes.
  • Add salt, black pepper, red chilli powder, turmeric powder, garlic powder, oregano. Mix well.
  • Now add crushed tomatoes.
  • Cook the sauce with the lid; on low flame for another 10 minutes.
  • Add lime juice and tomato ketchup. Add cooked spaghetti noodles into the sauce. Toss nicely. Garnish with chopped green onions and shredded cheese and serve hot!
