Easy Spaghetti with Homemade Vegetable Sauce

This spaghetti recipe with delicious vegetable sauce takes less than an hour to make and turns into a perfect, homemade spaghetti dinner. The sauce is made from scratch and is loaded with a ton of vegetables like mushrooms, onions, carrots, bell peppers and tomatoes.

Ingredients
  

  • 1 large Red onion diced
  • 1 large Bell pepper (any colour) diced
  • 5 cloves Garlic chopped
  • 2 Green onions chopped
  • 1 cup Carrots diced
  • 1 cup Mushrooms chopped
  • 1 can Crushed tomatoes
  • 2 tbsp Olive oil
  • 1/2 tsp Cumin seeds
  • 1 tsp Salt
  • 1/4 tsp Garlic powder
  • 1/4 tsp Black pepper
  • 1/4 tsp Red chilli powder
  • 1/2 tsp Turmeric powder
  • 1 tsp Oregano
  • 1/2 Lime juiced
  • 2 tbsp Tomato ketchup
  • 375 g Spaghetti noodles
  • Shredded cheese for garnish
  • Green onions for garnish

Instructions
 

  • Follow the instructions on the package and cook the spaghetti noodles in boiling water. Always add a tbsp of olive oil in the boiling water to avoid sticking of the noodles.

Sauce Prep

  • Heat olive oil in a pan. Add cumin seeds and chopped garlic. Sauté for a minute.
  • Add chopped red and green onions to the pan. Cook for 3 to 4 minutes. Add chopped bell peppers, carrots and mushrooms. Cook all these veggies for 5 to 6 minutes.
  • Add salt, black pepper, red chilli powder, turmeric powder, garlic powder, oregano. Mix well.
  • Now add crushed tomatoes.
  • Cook the sauce with the lid; on low flame for another 10 minutes.
  • Add lime juice and tomato ketchup. Add cooked spaghetti noodles into the sauce. Toss nicely. Garnish with chopped green onions and shredded cheese and serve hot!
