Mango Plum

Did you just say mango and ice-cream? Finally, summer is here and the best thing about summers for me is MANGOES and ice-cream. And this recipe has both, yay!

My aunt made this dessert for my sister when she was visiting her in England. Since then, my sister couldn’t stop craving it. I decided to re-create this recipe for my birthday and the outcome was delicious.

Believe me, this is the easiest and yummiest Mango recipe ever. It requires minimum ingredients and no cooking is involved.

It’s a yummy blend of fresh strawberries, grapes, bananas, mango pulp and vanilla ice-cream.

How long can you store it?

You have two options:

  1. Prepare the base with mango pulp, ice-cream and table cream. You can store this mixture in the fridge, in a sealed container for up to 7 days. When those sweet cravings hit, add fresh fruit of your choice into the mixture and enjoy!
  2. Or you can follow the exact same steps in the recipe and add fresh fruit right away. This will stay in the fridge for about 3 days when stored in a sealed container.

This is a great recipe to make ahead of time for family dinners, get-togethers and parties. It’s a big hit among the kids too.

Here's my favourite mango dessert recipe. Loaded with fresh fruits, this is the most easiest and yummiest mango dessert.

Equipment

  • Large Mixing Bowl

Ingredients
  

  • 2 Bananas diced
  • 1 cup Strawberries diced
  • 1/2 cup Seedless Grapes sliced
  • 3.5 cups Vanilla ice cream
  • 1/3 cup Table cream
  • 3.5 cups Mango pulp (30 oz can)

Instructions
 

  • Cut bananas, strawberries and grapes and set aside
  • Open a can of mango pulp and empty the contents into a large mixing bowl
  • Add vanilla ice-cream into mango pulp. Add 1 cup at a time, allow the ice-cream to melt while gently mixing. Repeat this step until all the ice-cream is well mixed with the pulp
  • Add table cream and mix
  • Add chopped fruits
  • Refrigerate for at least 1 hour before serving
  • Garnish with mint leaves and serve chilled!

Notes

  1. Ice-cream may take a few minutes to melt and combine with the pulp. Make sure the pulp is at room temperature to fasten the process.
  2. For this recipe use soft fruits like bananas, grapes and strawberries. Peaches and soft pears can be added as well.
  3. Mango pulp would stay in the fridge for about 3 days when stored in a sealed container.
