Seviyan Pudding - North Indian Pheni Recipe

Pheni is referred to as thin, silky seviyan kheer (pudding) which is prepared during Eid. It is one of the easiest desserts to make and tastes so delicious.

Ingredients
  

  • 5 cups Milk
  • 8 Cardamom seeds crushed
  • 5 tbsp Brown sugar
  • 1 Pheni roll
  • 2 tbsp Pistachios chopped
  • 2 tbsp Almonds choppes

Instructions
 

  • Pour milk in a heavy bottom pan and bring it to a boil. Simmer on low heat for 10 minutes.
  • Add sugar and crushed cardamom seeds and simmer for 2 more minutes.
  • Add pheni roll and mix well. Let it stand for 5 minutes.
  • Garnish with chopped pistachios and almonds. Serve warm!

Notes

  1. Pheni can be stored in the fridge for 2 to 3 days.
  2. If it gets too thick in the fridge, then add some milk while reheating it.
