Easy Raspberry and Chia Seed Jam

This tangy, sweet, healthy jam is super easy to make and is a low-sugar alternative to the regular store bought ones. Next time you have raspberries sitting in your fridge, do not let them go bad, instead whip up this jam.

Ingredients
  

  • 3 cups Fresh raspberries
  • 4 tbsp Maple syrup pure
  • 1 pinch Salt
  • 1/2 lime juiced
  • 1/2 tsp Vanilla extract
  • 2 tbsp Water
  • 2 tbsp Chia Seeds

Instructions
 

  • Wash the raspberries and add them to a saucepan.
  • Add maple syrup, water, salt, vanilla extract, lime juice. Cook on low heat for about 10 minutes. Mash the berries with a fork.
  • The berries will become soft and will turn into a puree. Keep stirring with a spatula.
  • Turn up the heat and bring to a final boil.
  • Remove from heat and let it cool down a bit. Add chia seeds and mix well.
  • Bring the jam to room temperature. The jam will start to thicken.
  • Store in a sealed glass container and it will last in the fridge for a week.

Notes

  1. The jam will have watery consistency in the beginning. Once, you add chia seeds, it will start to thicken and develop a jam like consistency.
  2. You can adjust the amount of sweetness as per your liking.
  3. If your berries are already tart, you can skip adding the lime juice.
