Ingredients
  

Soup

  • 3 tbsp olive oil
  • 1 tsp cumin seeds
  • 1/2 tsp coriander seeds
  • 4 cloves garlic finely chopped
  • 1 large red onion diced
  • 2 cans (1 can = 341 ml) sweet corn kernels
  • 1 can (796 ml) diced tomatoes
  • 1 box (900 ml) low sodium vegetable broth
  • 1/2 lime juiced
  • 1/4 cup spinach leaves
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garam masala
  • 1/4 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • 1/4 tsp garlic powder

Grilled Cheese

  • 16 slices bread
  • 8 slices cheese (mozzarella or cheddar)
  • 2 tbsp butter

Instructions
 

Soup

  • Heat olive oil in a pot and add cumin seeds, coriander seeds and chopped garlic to it. Sauté until fragrant.
  • Add diced onions and cook for about 5 to 6 minutes on medium heat. Stir occasionally.
  • Rinse sweet corn kernels under water and add to the pot. Cook for 3 to 4 minutes.
  • Add diced tomatoes, lime juice and all the spices (salt, black pepper, garam masala, turmeric powder, garlic powder, red chilli powder). Mix everything and cook for about 5 minutes.
  • Pour vegetable broth, mix and bring it to a boil. Do a taste test, add more salt, if needed.
  • Lower the heat to low, cover with a lid and let it simmer for at least 40 to 45 minutes. Stir occasionally.
  • Garnish with finely chopped spinach.

Grilled Cheese

  • Preheat skillet on medium heat.
  • Spread butter on one side of a bread. Place it on the skillet with butter-side-down.
  • Put a cheese slice on that piece of bread. If you prefer more cheese, add 2 slices. Take another piece of bread, spread butter on one side and place butter-side-up on top of the cheese.
  • Grill until the bottom piece is crispy, golden brown and flip over. Continue to grill until the cheese melts and the other side is golden brown as well. (Cover the pan with a lid for a minute to speed up the process of melting the cheese.)
  • Repeat with more slices of bread.
  • Cut the sandwich in half and serve with hot, sweet corn soup!
